Ingredients

  • 8 small tortillas
  • 2 Avocados
  • 2 orange tomatoes
  • 1 large red pepper
  • 8 lettuce leaves
  • 1/2 can of corn
  • 1/2 can of peas
  • 1 limes
  • 1/2 block of extra firm tofu

Instructions

  • Thinly slice tofu
  • Add 1 tbsp of olive oil to a griddle pan on medium high heat and lightly fry the tofu
  • Cut each tomato into 1/8ths
  • Open and drain liquid from can of corn and peas
  • Deseed and thinly slice red pepper
  • Peel and thinly slice avocados
  • Create Fajitas with the ingredients and add a squeeze of lime, salt and pepper and sauces of choice
  • Enjoy
